Alessandro Bortolin Prosecco Fonduel Col Fondo
This organically grown, certified sustainable Prosecco Col Fondo is unlike most other Proseccos you've encountered, which are made using the Charmat tank method. This bone-dry, yeasty, super elegant bottling is actually made using Methode Champenoise wherein the second fermentation happens in the bottle, however with Col Fondo Prosecco, the wines are not disgorged, leaving a cloudy, yeasty sediment at the bottom of the wine. Grown on 60 year old vines in Valdobbiadene, and made of 100% hand-harvested, native yeast fermented Glera, this shows a super fine mousse and lovely notes of green apple, meyer lemon and baked brioche.
