Pedro Ximenez is most commonly used to make sherry in Spain, however small amounts thrive in South America, and this sustainably grown version from the Limari Valley in Chile is just dynamite. Clean, crisp and vibrant, with briny minerality, this delivers cooling notes of cucumber and honeydew melon along with fragrant apricot and nectarine fruit. Only 800 cases were made in total from a single vineyard planting.
