Mestres is an incredibly historic winery in Penedes, Spain that dates back to 1312. They were the first to coin the term Cava and have it printed on the label, setting a standard for the entire category of Spanish sparkling wine. This crisp, fresh bottling was made using Methode Champenoise and is a blend of Macabeo, Xarel-lo and Parellada, the three classic Cava varieties. Riddled and disgorged by hand, this is racy and bright and shows clean notes of granny smith apple and citrus fruit.
