This racy, lemon zest and sea salt-scented bottling hails from the town of Chitry near Chablis in Burgundy, which bears the same famous Kimmeridgian soils that are found in Chablis. You'll notice a very distinctive oyster shell aroma and briny minerality here which are directly reflective of these incredibly unique soils. This bottling is made of 100% Aligote, which is one of the only permissible white grapes in Burgundy besides Chardonnay.
