This chamomile scented bottling is made of 100% Pecorino, a very obscure white variety indigenous to the central Italian region of Abruzzo. Grown in the Terre di Chieti appellation and Demeter-certified biodynamic as well as certified organic, this shows lovely texture and weight alongside a beautifully perfumed palate. You'll see delicate layers of bartlett pear, kiwi, lemon zest, pomelo, and orange blossom honey on this very cool find.
